Tasty Muffin Recipes suitable for diabetics and just in time for Back-to-School

Would you like some 'new ways to brighten your breakfast at home? Do your kids like a muffin or tucked in their lunch box for a snack after school? There is a diabetic in your family? Here are some tasty muffin recipes that will respond to any of the situations described above. For breakfast, add a little 'fresh fruit, link sausage, bacon, an egg or a cup of low fat, sugar-free yogurt and you have a meal. LEMON MUFFINS poppy seed oil

2 1 / 4 cups cake flour
1 / 2 cup Splenda
1 / 2 cup of sugar-Lite
3 / 4 cup butter, softened
1 / 2 cup instant skim milk powder
2 teaspoons baking powder
3 / 4 teaspoon baking powder
3 / 4 cup buttermilk
2 tablespoons freshlemon juice
2 1 / 2 tablespoon grated lemon rind
1 egg
1 / 2 cup egg substitute
2 teaspoon vanilla extract
2 tablespoons poppy seeds

Preheat oven to 350 degrees. Line 18 cups of baking paper cups. Set aside.

In a bowl, stir together cake flour, Splenda, Equal, and the butter over medium speed of electric mixer 1-2 minutes until blended and crumbly. Add powdered milk, baking powder, baking soda and salt. Mix at low speed until blended. Blend buttermilk,juice, lemon zest, egg, egg substitute and vanilla in a small bowl. Add 2 / 3 of the flour mixture to buttermilk mixture. Mix at medium speed for one minute. Stop and scrape sides and bottom of the pot. Mix at medium-high speed 45 to 60 seconds. Reduce the mixer speed to low and add the remaining liquid and mix. Stop mixer and scrape sides and bottom of the pot again. Add the poppy seeds. Mix at medium-high speed 30 seconds. Pour the batter into the prepared muffin pans. Bake muffins 12-15 minutes or until a toothpick insertedin the center comes out clean.

Banana Chocolate Chip Muffins This is a favorite of children. It 'a particularly effective way to get your child a special treat diabetes.

Banana chocolate chip muffins

3-4 large bananas, ripe and mashed
3 / 4 cup Splenda Granular
1 / 4 cup egg substitute or 1 egg
1 1 / 2 cups flour
1 teaspoon baking powder
1 teaspoon baking powder
1 / 4 teaspoon salt, optional
1 / 3 cup melted butter
1 / 4 cup mini semi-sweet chocolatechip

Preheat oven to 375 degrees. In a bowl, stir together bananas, sugar and eggs or egg substitute. Add flour, baking soda, baking powder and salt. Mix well. Mix the butter, chips and chocolate. Fill paper lined muffin tins to 2 / 3. Bake at 375 degrees for 15-20 minutes.

Yield: 18 muffins

Note: Yes, there is a small amount of sugar in the chocolate chips. However, in a muffin is not enough to raise blood sugarlevels. Of course consult in case of severe diabetes with special needs with your doctor or buy sugar-free chocolate chips.
