Best Christmas Cookie Recipes - Peppermint Pinwheel Cookies

A crisp cookie that looks like a pinwheel.

3 / 4 cup butter, softened

3 / 4 cup sugar

1 egg

1 teaspoon vanilla extract

2 cups flour

1 / 2 teaspoon baking powder

1 / 2 teaspoon salt

1 / 2 teaspoon peppermint extract

1 / 4 teaspoon red liquid food coloring

Directions

Preheat oven to 350 degrees.

Prepare a baking pan with cooking spray.

In a bowl the butter and sugar. Netin egg yolk and vanilla. Mix the flour, baking powder and salt gradually add the creamy mixture and mix well.

Divide the dough in half and add red dye extracted and in one section.

Take four sheets of parchment paper and roll out each portion of dough between two sheets. Roll out the dough into a rectangle 16x10 inches. Remove the wax paper.

Place the red rectangle on the rectangle of plain and roll tightly (jelly roll style), which begins with a longside. Wrap in plastic wrap. Refrigerate overnight or until firm.

Take the dough and cut into 1/4-inch slices. Place 2 inches apart on greased sheets. Bake for 12 to 14 minutes or until September Cool completely.

Makes 48 cookies.

These cookies are full of delicious cherries and pecans.

1 cup butter, softened

1 1 / 4 cups sugar

1 egg

2 1 / 2 cupsflour

1 1 / 2 teaspoons baking powder

1 / 8 teaspoon salt

1 cup chopped pecans

3 / 4 cup red and / or green candied cherries

Directions

Preheat oven to 350 degrees.

In a large bowl, cream together the butter and sugar. Add egg and mix well.

In another bowl, combine flour, baking powder and salt added to the creamy mixture and mix well. Stir in pecans and cherries.

Form the dough into four 8-inch rolls and wrap in plasticwrap. Refrigerate 4 hours or more, or until firm.

Take the dough and cut into 1/8-inch to 1/4-inch slices. Place 2 inches apart on an ungreased baking sheet. Cook 7 / 8 minutes or until lightly browned and edges are set. Cool completely.

Makes 156 cookies.

These little cheesecake cookies are easy to make and so delicious.

2 cups flour

2 / 3 cup packed brownsugar

2 / 3 cup cold butter

1 cup chopped walnuts

Directions

Preheat oven to 350 degrees.

In a bowl, combine flour and brown sugar, cut into mixture until batter-like crumbs. Stir in the walnuts. Reserve 1 cup. Press the remaining crumbs in bottom of a 13x9x2-inch greased pan. Bake for 12 minutes.

Meanwhile, in another bowl, beat the cream cheese and sugar until light and fluffy. Add eggs one at a time, beating wellafter each. Whisk the milk, lemon juice and vanilla, pour over the crust. Sprinkle with reserved crumbs.

Bake for 25 to 30 minutes or until sides are golden and the filling is almost September Cool and cut into strips. Garnish with cherries. Store in refrigerator.

Makes 24 biscuits bar.
